Menu for Dec.31-January 6th



Wow, where did the year go?  This is the last menu I will be posting for 2018.  Here is our menu for this week.  I don't post breakfast because I usually do not eat breakfast and for lunches, we usually eat leftovers from the night before.  I do have snacks planned for this week which I will post at the bottom of this weeks menu.  We are starting keto/Trim healthy mama ( I was doing this past summer and just went off but going back on this week.)

Menu for December 17th-23rd



Wow only a week away from Christmas.  Where does the time go? I did ok following last weeks menu.  Some days I did end up changing.  The new recipe that I tried from https://www.rachelcooks.com/2016/03/23/cornish-game-hen-recipe-sherry-orange-rosemary/  was really good.
  I never had cornish hens before.  They were super yummy and very moist.  It's perfect for small families.  I didn't get to the Chicken Au Champagne yet.  That will be on the menu for today.  Saturday we did wings and fries instead of the taco salad.  I also tried a few desserts.  Some were good and one recipe I had to throw away.  It was nasty.  Recipes do not always turn out as planned.  I may have to pick up a few items but the goal this week is not to do any shopping until this weekend for Christmas.  Here is the new menu for this week.

Menu for Dec.10th- Dec.16th

This past week I didn't go strictly by the menu as was planned.  I had things in the fridge that I needed to use up and Mike wanted different things then from what was planned.  You learn to be flexible not just in life but also when it comes to meal plans.  That's why its so important for me to have my freezer, pantry and refrigerator stocked so I can change if I need to.  When meal planning check and see what you have on hand.  Then you can make a grocery list to fill in where needed.  This week I am using mostly what I have in the freezer but I also plan on cooking some new recipes that I have found for a project I am working on.  Here is the menu for the week.  It may change throughout the week depending on how things go.

Thanksgiving 2018

We took this year and went to visit my Aunts for Thanksgiving.  We took a different route to get there this time.  We went up through Vermont.  It was so pretty.  The day before it snowed so the scenery was even more beautiful with the freshly fallen snow.  The roads were a little rough when we started out but they got better when we got on the major highways.  Thankful we took the truck.  It was nice to drive through the mountains.  God's handiwork is so beautiful.  The weather turned out to be nice both there and back.  We didn't get caught up in any storms thank goodness. 






The time with my Aunts was nice and relaxing.  Nathan would come in with us in the evening and we would all watch Wheel of Fortunate and Jeopardy. We would try to see who guess the most. I love the time I get with my family because I don't get to see them much.   Mike was able to help them fix their internet and mailbox. We really enjoyed our time with them.  We left Saturday for home and took the same route home.  As we were traveling out of Pennsylvania we came across hot air balloons.  Who would actually go up in a hot air balloon when it's cold out?   
We got back Saturday afternoon.  Our bedroom was so cold that the glasses of water that I had left on our nightstands were frozen.  When I was laying down and relaxing I heard a pop in our closet.  I went in and found the cans of water that I had in there had frozen and busted.  It was a mess.  That's how cold our bedroom and closet gets.  In the past, we have used our closet as a freezer.  

Well, now it's time to start preparing for Christmas.  I have some ideas floating around in my head that I want to do.  I plan on doing some baking and making some Christmas presents.  I believe homemade Christmas gifts mean so much more. While we were in Pennsylvania Mike took Nathan out black Friday shopping and got some gifts.  There's some little stuff we want to get and we still need to get the grandbabies some more stuff but we are pretty much done.  

Time to head to bed soon.  As we sleep tonight a snowstorm is supposed to sweep in and dump snow on us.  The weather people are calling for 6-9 inches.  What joy.  I want summer. :)

Menu for November 26th-December 2nd



MENU FOR NOVEMBER 26th - DECEMBER 2nd
Today is another one of those dreary Mondays.  I started supper in the crockpot which is Baked potato soup.  I also made some no bake cookies for Nathan. 



Made a new recipe called Honey Cake.  I have been watching the Great Britain baking showing and on there one of the bakers made a Honey cake.    I believe it originates from the Jewish culture.  More than likely you would see it on the table for Rosh Hashanah.   Rosh Hashanah is the Jewish New Year.  The recipe I used said it is best the next day.  I cut the bread up and put it in the Fridge.   We will have it in the morning with our coffee and maybe hot chocolate for Nathan.  


Here is our menu for the week.  It may change.  I usually change it if I want something different or if Mike doesn't like what was planned for that day. 

MONDAY: Slow cooker Baked potato soup ( I may make bread in the bread maker)

TUESDAY: Spaghetti using homemade sauce that was in the freezer.

WEDNESDAY: Homemade bean, cheese, and beef burritos.  I kind of did my own thing for a recipe.  Having this Mexican Rice

THURSDAY: Leftovers

FRIDAY: One of my freezer chicken meals.  Haven't really decided yet.

SATURDAY:  Probably will be celebrating my daughter's 19th birthday.  She hasn't decided yet what she wants for supper or her cake.  Backup plan is pizza.

SUNDAY: Leftovers

This is basically going to be it unless I decide to do some baking.  My goal for the year is to learn new baking/cooking techniques.  Have a great week everyone.:)

Looking out my window:  Actually looking out of my dirty door window because that's where my desk is in front of.:)  What I see is dreary brown and I can see my garden that we didn't use this summer.  Maybe next summer we will.  There is some snow on the ground.  Dreaming of spring already.  It is just so cold.


I am thinking: That warmth can't come fast enough.

I am thankful:  That I woke up this morning.  It is another day to start over.

I am reading (read) /watching (watched) / listening to: watching Call the Midwife and the Waltons.  Reading a new book called Cold Shot by Dani Pettrey.  She is a new author to me.  I just started it so I am not sure what I think of it so far.  To me, it's kind of slow.

I am hoping: to get what I have on my to do list today done.

I am learning:  to wait on God and be patient with His timing and not mine.

In my kitchen:  nothing much.  I made grilled cheese for lunch.


In the schoolroom: My 15-year-old does school online using Liberty Academy.  He is to the point I just check his work.

In my garden:  Nothing, which is so sad because it means it's cold outside.

Voting day and Menu for the week of November 5th to November 11th.




Today is the day we should be going to vote.  It's a very dreary, damp and cold day to be doing it in but I can't use it as an excuse for not voting.  If you are not sure of the candidates to vote for, here's a place you can go to and look at the candidates that are running.  You just put in your street address and it will bring up the ones running.  Pretty nifty.

Here's the menu of the week:

Monday- We had a greek type chicken salad.  It was really good. I started to follow a recipe and then started to do my own thing.  Sometimes I will do that.   I simply marinated some cut up chicken breast in some olive oil, lemon juice, yogurt, salt, pepper, garlic cloves, and parsley. I used a gallon size ziplock bag to put the chicken and sauce in.   This marinated for like 3 hours in the refrigerator.  The more you can marinate it the better it will be.  Once this is done you just take the chicken (don't reuse any of the marinade that's in the bag) and put it in a pan and fry up.  I cooked up some quinoa and cut up my vegetables.  I used half of an English Cucumber, half red onion, and Roma tomatoes.   I mixed the cut-up vegetables in with the cooked quinoa.  Season with salt and pepper or you can also use a greek seasoning.  When the chicken is done make up your plates.  Put the quiona and vegetable mixtured on top of a bed of spring mix lettuce, top with the cooked chicken, feta cheese and black olives (you can use greek olives).  For dressing we just used ranch but you can make a homemade greek dressing.

Tuesday-  Not cooking ( Whitney is making Philly Cheesesteak sloppy joes with fries.  For Mike and I it may be a salad with the meat mixture.)  Trying to go healthier but potatoes are my favorite comfort food so we will see if I give in and eat the fries.  :)

Wednesday-  Chicken, rice and broccoli casserole (freezer meal that I made)

Thursday- Spaghetti with homemade sauce from the freezer

Friday- Leftovers

Saturday- Steak and twice baked potatoes (easy have some in the freezer that I made a couple of weeks ago.)

Sunday- Not sure.  Mike and I may go out for Veterans Day.


Yesterday I made Nathan and I some lunches for the week.  Made Roasted salmon, broccoli and sweet potatoes.  I made four of these and then Mike came in wanting one.  He really liked it.  He isn't a big fan of salmon.  Salmon is one of my favorite.    I used this recipe as a guide.  The pictures on the recipes are much prettier.  :)

Our first Nor'eastern of the season

This weekend our first Nor'eastern swept in.  If you can call it that.  Started snowing and in the end, it all switched over to rain.   Kind of boring if you ask me.  Really though I could do without the snow and cold.  Ready to move south.:)



Most of Saturday I cooked up some meals for the freezer.  We had gotten chicken breast on sale for $1.19 a pound.  We ended up getting 40 lbs.   The goal was to put the chicken into meals whether that was cooking some or putting them in a marinade.  But I wanted all the chicken done before the end of the day Sunday  and I accomplished that goal.  Having a goal does help.  We also got 100lbs of potatoes for $20.  I am hoping to get some stuff done with those throughout the week and maybe next weekend.  Some of the recipes just tell you to add the chicken to a gallon freezer bag and pour on the marinade.  This is what I got done for the freezer

For the Honey Mustard chicken, I put four Chicken breast into a freezer gallon bag and added a bottle or Rays Honey Mustard to it.  This sauce is delicious.  You can also make your own honey mustard. 


Feels good to have meals prepped ahead for those days that I am either lazy or busy.  As for the storm it became mostly rain and the snow we did get is just about gone.   It's like being in the south.  :)   Well, I am off to work on my menu for the week.  Hope to get that posted later today.  Have a wonderful day .:)

This morning  I worked on a little office area for myself.  I took a little part of the living room that doesn't get used much.  I do love it and so comfy.  I plan on getting a lamp and a rug for my area.

Menu Oct. 8th-Oct. 14th

This past week was relaxing.  I did have to take Nathan to have his braces fixed. Watched my grandbabies on Wednesday and Thursday.  Worked on a menu.  Did pretty good with sticking with it.  Most of the week I cooked food in the Pampered Chef quick cooker.  Love that pot.  Here's what our menu looked like for the week. This was from Monday, Oct. 8th - Sunday, Oct. 14th.

Monday-Whole chicken from the store and the microwave Uncle Bens rice

Tuesday-Instant Pot Pork tenderloin, we had cauliflower rice with it.  Here's the recipe I used.

I used this recipe.  I used hot Italian sausage and typically when I make it I use heavy cream but only had half and half.

Thursday- Creamy Macaroni and Cheese with kielbasa in it and had it with Brocolli.  I used plain water in place of the chicken broth and replaced the milk with half and half.  This was really good and creamy.

Gone on a little trip

Every so often my husband has a class he does for his computer work.  I went with him last time when he went in January.  This time around we decided to bring Nathan along.  We left a little after 4 am on Sunday morning.  The Hotel is pretty descent.  Not sure if we would stay in this one again.




When we got in on Sunday we got soaked going to a little sandwich shop called Jimmy John's.  I can't say that it was the best one that I have been to but it was good.  For supper, we decided to order pizza.  We ordered Domino's online and it was all great until the Manager called us to see if we wanted to cancel our order because it was going to be a three-hour wait.  YES!!  Three-hour wait.  WOWSERS.  We canceled that of course.  We ordered Papa John's and that was about an hour and a half.

Yesterday Nathan an I took a walk down to The Gallery.  It's a three almost four-story mall.  I say almost because they are still working on the fourth floor.  They had the typical stores you would find in Maine.  It was pretty inside.

When Mike got done with his class last night we went and got some things we needed from Walmart.  One thing about being in a city is when you go shopping expect it to be crowded and the shelves to be empty in places.  That was quite annoying.  We chose to eat out some but most of the meals I will be making here in the hotel room.  Mike and Nathan really wanted a steak.   So last night in the Pampered Chef Quick Cooker we made steak.  Mike used the sear button and added a little olive oil to the bottom.  The Quick Cooker is a new product that Pampered Chef just came out with and so far I love it.  We had steak with Mac and cheese (Nathan picked this out from the frozen section).  I have to say that it was pretty good.


Today we haven't done too much.  Nathan did school and I have been lazy.  Well, I did do a cooking video but I Mike is going to help me edit it.  I don't have clue what that will involve.  Mike and I have a social event to go to meet his teachers and classmates tonight.  Tomorrow Nathan and I plan on going to Ripley's Believe or Not.  That's about it.  I will leave you with what I made for lunch today.  I made Pork Carnitas.  I used the Pampered Chef recipe and it was really good.

Been a very long time

Wow, its been years since I last posted anything on my blog.  A lot has happened in the past few years.  Since my last post, we have moved to the Western Foothills of Maine.  We live in a very old farmhouse that we have slowly been repainting and doing some major repair of.  Where we live its beautiful but, to be honest, I am ready to move to someplace warmer.  It gets really cold where we are and you can imagine what is like in an old farmhouse.  When the wind blows you can hear it through the cracks.  I do love our little house.

Since moving our Daughter has gotten married and has had two beautiful children.  Having grandbabies is so much fun.  The best part is spoiling and then sending them home.  We can't begin to imagine what life was like without them.  They make life so much fun.  Our oldest son is busy with work and substituting.  Our other daughter is working hard.  We are down to one in the house.  Our youngest son.  He is busy with school (still homeschooling), football and wrestling.  My life is so different now then what it was.  I am having a harder time then I thought I would with our children slowly starting to leave the nest.  I miss them.  The house is quiet and sometimes I feel like I am missing something.   It's all that I have known.

Since I seem to have more time on my hands I have started looking for things that I could be doing. I do sew some.  But I wanted to start making some money from home since Nathan is still home.  I thought long and hard and decided to become a consultant with Pampered Chef.    I love their products and have been using some of their stuff since my kids were little.  It's a slow start but I am having faith it will pick up and I can start helping others.
